Earthy aromas of dried mushroom, truffle and game mingle with stewed strawberries and raspberry jam. Bark and cloves, too...medium-to full-bodied with soft, ripe tannins. Fresh and juicy with lingering ripe fruit and spices. Hard to resist.

Lively, mineral- and earth-accented red berry aromas are complemented by suggestions of five-spice powder, vanilla and candied flowers. Silky and penetrating on the palate, offering concentrated red currant, bitter cherry, spicecake and lavender pastille flavors accompanied by a building mineral nuance. Shows excellent balance and spicy cut on the long, taut, energetic finish, which is shaped by youthfully chewy tannins.

Tolosa Winery

Tolosa was founded in 1998 by Robin Baggett, Bob Schiebelhut and Jim Efird. The business partners began buying Edna Valley ranches and planting them with vineyards. Baggett was a native of the area who dreamed of running a cattle ranch as his grandfather had done, but by the late 1980s viticulture interested him more. Baggett in 2006 started the Alpha Omega wine venture in Napa Valley with the idea of making world class Bordeaux style wines. The success of Alpha Omega prompted him to focus on French style wines in Tolosa too, and in 2015 Baggett hired French native Frederic Elivert to craft Pinot Noir and Chardonnay on Tolosa’s Edna Valley estate. Consulting winemaker is Jean Hoefliger. Under its 1772 Series label Tolosa also produces small amounts of Rhone blends, Grenache and Sauvignon Blanc.

United States, California, Central Coast, Edna Valley

Edna Valley AVA is within San Luis Obispo County, and within the large Central Coast AVA. Edna Valley became an AVA in 1982 and it includes 22,400 acres of extremely fertile land blessed with a long growing season. Pinot Noir and Chardonnay are the principal grapes, though Syrah, Sauvignon Blanc, Pinot Gris, Albarino, Grenache, Viognier, Merlot and Petite Sirah also are grown. Spanish missionaries were growing grape vines in the Edna Valley in the 18th century, but the valley’s modern wine industry took off in the 1970s. Today there are more than 50 Edna Valley wineries.

This red wine is relatively light and can pair with a wide variety of foods. The grape prefers cooler climates and the wine is most often associated with Burgundy, Champagne and the U.S. west coast. Regional differences make it nearly as fickle as it is flexible.
