Trento DOC was established in 1993 as an appellation for white and rosé sparkling wine made using “metodo classico,” or the Champagne method. This means that the second fermentation for sparkling wine must occur in the bottle, which is then riddled and disgorged by freezing a small amount of the wine in the bottle neck, then removing the frozen plug. Only Chardonnay, Pinot Noir, Pinto Meunier and Pinot Blanc are allowed in Trento AOC wines.
